The name says it all: for us, slowness is a decisive factor in the production of a high-quality wine.
Our viticulture is organic, our grapes are exclusively hand-picked and come from vines up to 80 years old. Yields are consistently reduced and natural processes are decelerated.
THE TEAM
Axel Wulfken has found a partner in Jérome Estève, with whom he has put his conviction of emphatically slow and gentle winegrowing into practice. The DISCOVERY SLOWNESS is produced on the 20 hectare family vineyard Chateau Monfin.
It is situated in idyllic location on the Mediterranean Sea above the village of Peyriac-de-Mer, south of Narbonne.
THE CULTIVATION
Our viticulture is organic. Our grapes are harvested exclusively by hand. They come from vines up to 80 years old. Yields are consistently reduced to 25 – 35 hl/hectare. The processes in the cellar are decelerated, the wine ferments slowly on its natural yeasts in thermo-regulated steel tanks.
The wine partially matures in barriques. The wood is 2-3 year old French oak. This supports the maturing process without giving the wine artificial wood notes.
